There are many ways to make chicken spring roll recipe. People use a variety of vegetables like carrot, cabbage, celery, green peas, etc. This particular way is unique and here I am not going to use any vegetables except potatoes. This is only and only for chicken lovers. The boiled potatoes and raw onion along with fried shredded chicken absolutely give you a different experience in your tongue for sure.
Basically, Sri Lankans make this for evening snack but you can have this for breakfast and dinner as well. This crispy chicken spring roll with tomato sauce will be a good combo for anyone, especially for kids. When you have all the ingredients and time, give it a try. Chicken Spring Roll Recipe Step by Step with Pictures
Ingredients
- Boneless chicken – 500g
- Potato – 350g
- Onion – 250g
- Green chili – 4 to 6
- Garlic clove – 4 to 6
- Curry leaves – Few
- Spring roll paper – 40 sheets
- Cardamom – 3 or 4
- Crushed cinnamon – ¾ teaspoon
- Chili powder – 1 tablespoon
- Mustard seeds – ¼ teaspoon
- Turmeric powder – ½ teaspoon
- Salt – As you wish
- Water – 100ml
- Cooking oil – As you need
Instructions
1. Take the boneless chicken and cut it into large pieces as shown in the picture below. Rinse them well and add cinnamon, cardamom, turmeric powder, and salt.
2. Mix everything well and place it on the stove.
3. Cook covered under high flame till the chicken turns into the tender. For me, it takes about 12 minutes. In a halfway through, or after 6 minutes take off the lid and give a nice and gentle stir. (Refer Note 1)
4. Let the chicken cool down before handling. Now tear the chicken into small pieces as shown in the picture below.
5. Heat the oil in a deep fry pan and fry the chicken pieces under high flame.
6. Fry them till it turns into little brown as shown in the picture below. For me, it takes about 5 minutes. (Refer Note 2)
7. Dice the onion, green chilies, garlic cloves, and curry leaves as shown in the picture below. (Refer Note 3)
8. Also, dice the potatoes as shown in the picture below.
9. Get ready with chili powder, mustard seeds, salt, and water. (Refer Note 3)
10. Heat the oil and add the mustard seeds. Let it splutter.
11. Now add half of the onion and keep the rest aside for final preparation. Fry the onion under medium flame till it turns into translucent or for 2 minutes.
12. Add garlic, curry leaves, and green chilies. Mix and fry them under medium flame until the onion start turns to brown color.
13. Now add potato, chili powder, and salt.
14. Also, add the water and mix them well.
15. Cook covered under low flame until all the water disappears. For me, it takes about 5 minutes.
16. Now add the fried chicken pieces and rest of the onion.
17. Mix and cook uncovered under low flame for 1 or 2 minutes. Stir and mix constantly to avoid burn.
18. Taste the curry and adjust salt if needed.
19. Now make the spring rolls as shown in the picture below. There are many ways you can fold the spring roll. Check them out on YouTube.
20. Heat the oil in a deep fry pan and add spring rolls. Fry them until the outer layer gets light brown color. (Refer Note 4)

Notes
1. You don’t need to add water, but if you feel the chicken starts to burn before it cooks well you need to add some water.
2. Don’t fry them too much as they become hard and crispy otherwise.
3. If you don’t like more spiciness you can reduce the number of green chilies and the amount of chili powder as you wish.
4. Let the cooking oil gets maximum heat before place the spring rolls in it.
