Who doesn’t like peanut cookies? Peanut cookie is one of the most favorite snacks in Sri Lanka. This easy peanut cookies recipe without eggs or peanut butter is going to be your favorite recipe for sure. Since we don’t add eggs, this recipe is completely suitable for vegans. The roasted peanuts along with sugar and butter give a tempting taste, especially for kids. Alright, let’s see how to make easy peanut cookies without eggs and peanut butter.

Easy Peanut Cookies (Vegan)
Ingredients
- Roasted peanut – 200g
- All purpose flour – 500g
- Butter – 200g
- Brown sugar – 175g
- White sugar – 175g
- Vanilla – 1 ½ tablespoon
- Baking powder – 1 teaspoon
- Baking soda – 1 teaspoon
- Salt – ¾ teaspoon
Instructions
1. Take the large bowl and add the butter. Also add the white sugar, brown sugar, and vanilla. The reason why I add the brown sugar is that brown sugar makes cookies moister and chewier than does white sugar.
2. Mix everything together until well blended. For me, it takes about 5 minutes.
3. Now add baking powder, baking soda, and salt.
4. Add all purpose flour.
5. Mix everything together with your fingers and palm till totally combined. I did this process for about 5 minutes. You should mix them well enough. If not, the baking powder, baking soda, and salt won’t combine fully with the flour.
6. Now add the roasted peanuts and mix them up well.
7. Now take some mixture and make the ball. Place the ball in your palm and slightly flatten each ball as shown in the picture below. Do the same until you have done with all the mixture.
8. Greased the baking tray with a little butter and place them on it. Or else, you can place them on an ungreased cookie sheet.
9. Bake in a preheated 375 degrees (Fahrenheit) oven for 10 to 12 minutes or until the cookies get lightly brown.

1. I recommend you use the good quality butter because it impacts a lot in the taste of the cookies.
