Pazhaya Soru Kanji | Neeragaram | Leftover Rice Recipe

Have you ever thought about what to do with the leftover rice? If yes, you are in the right place. Today, I am going to show you how to make Sri Lankan Pazhaya soru kanji which is made with the leftover steamed rice.

Pazhaya soru kanji, also known as neeragaram is one of the healthiest breakfast meals, people make very often.

It is one of the oldest recipes, many of our grandparents and great grandparents ate this for their healthy life.

Alright, let’s jump into the main subject. Here is the best and easy way to make pazhaya soru kanji using the leftover steamed rice.

Pazhaya Soru Kanji | Neeragaram | Leftover Rice Recipe

Pazhaya Soru Kanji Recipe

Ingredients
  • Pazhaya soru/Leftover rice – 2 cups
  • Water – 500ml
  • Semi thick coconut milk – 350ml
  • Onion (Shallots) – 100g
  • Green chili – 2
  • Lime – ½
  • Salt – As you want
Notes

1. Brown rice is better than white rice for this recipe.
2. If you make the rice for lunch add the water before you go to bed at night and make this recipe the next day morning.
3. Using shallots is better than the large onion. If it is hard to find shallots, use the large one.
4. Instantly made coconut milk from grated coconut is better than coconut milk powder or bottled coconut milk.
5. You can reduce or increase the water and coconut milk as you want.
6. If you don’t like more spiciness reduce the number of green chilies according to your taste.

Instructions

1. Take the leftover steamed rice and add water in it. Cover and leave it overnight, at least 8 hours.

2. On the next day morning, take the fermented leftover rice. Besides, chop the onions and green chilies as shown in the picture below. Apart from that, prepare the coconut milk and take the salt along with lime.

3. Now, smash and squeeze the fermented leftover steamed rice using your fingers as shown in the picture below.

4. Add onion, green chili, and salt. Again mix, smash, and squeeze everything using your fingers.
