Many people asked me to post the whole roast chicken recipe for past few weeks. Here you go, guys. The whole roast chicken recipe is one of the delicious and well-known recipes in Sri Lanka. Basically, people in Sri Lanka buy whole roasted chicken in restaurants. They never know how easy to make this recipe at home. Once you follow my step by step process, you will get a mouth-watering whole roasted chicken. Hereafter stop buying the roasted chicken at restaurants, instead, make it on your own at home.
In terms of health benefits, chicken is better compared to other red meats. Chicken is the most common type of poultry in the world. As many of you know, chicken is very rich in protein. Also, it is a good source of vitamins and minerals. The protein, vitamins, and minerals play an important role in our body. Apart from all, chicken is good for weight loss program, control the blood pressure, reduce cancer risk, and reduce cholesterol. All in all, chicken is good for our healthy body.
This whole roast chicken recipe is very tasty, so most of the people would like to eat this roasted chicken rather than ordinary chicken curry. Especially, kids love to eat this roast chicken recipe because it is crispy and spicy less food. You can have this alone or with rice, bread, pittu, etc. I personally would like to eat this roasted chicken with lime and onions. Sri Lankan Whole Roast Chicken Recipe
Ingredients
- Whole chicken – 1 ¼ kg
- Chili powder – 1 ½ tablespoons
- Garlic paste – 1 tablespoon
- Ginger paste – ¾ tablespoon
- Maggi chicken soup cube – ¾ tablespoon
- Butter – 15g
- Lime – ½
- Turmeric powder – ½ teaspoon
- Salt – As you need
- Cooking oil – As you need
Instructions
1. Take the whole chicken and rinse it well at least 2 or 3 times.
2. Get ready with garlic paste, ginger paste, turmeric powder, Maggi chicken soup cube, salt, lime, chili powder, and butter. (Refer Note 1 and Note 2)
3. Put the chicken in a large bowl. Add chili powder, garlic paste, ginger paste, turmeric powder, and salt.
4. Paste everything inside and outside of the chicken using your fingers. Let it marinate for 2 to 3 hours.
5. Heat the oil in a large frying pot and wait until the oil gets maximum heat. Now, carefully place the marinated whole chicken inside the oil. (Refer Note 3)
6. Fry the chicken well. If you are using little oil, you should turn around and fry every little part of the chicken. At first, you can put the flame in high. But later turn the flame to medium. I used little cooking oil and for me, the frying process took about 15 minutes.
7. Now grease the fried chicken with the lime. Just squeeze the lime and rub every outer part of the chicken. (Refer Note 4 and Note 5)
8. After the lime, grease the chicken with Maggi chicken soup cube. Rub it with your fingers outside and inside of the chicken.
9. Finally, do the same with butter. Paste the butter outside and inside of the chicken.
10. Preheat the oven and place the chicken inside. Set the oven to 170 degree Celsius and 30 minutes on bake mode.
11. Take off the chicken and place it on a plate. You can decorate the chicken with sliced onions and limes.
12. Serve and enjoy this delicious whole roast chicken in Sri Lankan style.
Notes
Note 1: This whole roast chicken is not even a little spicy. So don’t reduce the chili powder.
Note 2: If it is hard to find Maggi chicken soup cube, you can use any other brand chicken soup cube or chicken soup powder.
Note 3: Here I’m using a little cooking oil. But I recommend you to use a large amount of oil if you can. Actually, the whole chicken should sink into the oil. That’s the right way to fry whole chicken.
Note 4: If half of the lime is not enough, you can use another half. You should rub the lime every outer part of the chicken.
Note 5: I recommend you to rub the lime as soon as getting off from the oil. Don’t let the chicken get to room temperature.
