How To Make Kothu Roti At Home | Easy Beef Koththu Parotta Recipe

Who doesn’t like kothu roti? Kothu roti, also known as koththu parotta is one of the famous dishes in Sri Lanka. In fact, it’s little hard to choose the people who don’t like kothu roti in Sri Lanka. You might try kothu roti at least once in your lifetime. But, have you ever think about how to make kothu roti at home? If yes, you are in the right place and I’m going to show you how to make kothu roti at home in an easy and quick way.

There are many different types of kothu roti available. Chicken kothu, beef kothu, mutton kothu, prawn/shrimp kothu, fish kothu, squid/cuttlefish kothu, egg kothu, vegetable kothu, and mix kothu are some of them. Through this post, I’m going to show you how to make beef kothu roti at home.

Is kothu roti/koththu parotta healthy food? Yes, it is a healthy food, if you make this at home only. Because in restaurants, mostly they use low-quality oil and sometimes they use rotten vegetables. Unlike other foods, you won’t find any difference in kothu roti if the restaurants add old oil or rotten vegetables. This is one of the main reasons why I won’t recommend you to buy kothu roti outside. If you really wanted to eat kothu roti, better to make at your home itself. It’s very easy and you will get some health benefits as the kothu roti contains vegetables and eggs.

We Sri Lankans love to eat kothu roti at lunch or dinner time. Keep in mind, for this particular recipe, I bought parotta/roti outside. If you know how to make parotta/roti, then you can make that at home too. Alright, let’s see how to make kothu roti at home in step by step process with images.

How to Make Kothu Roti at Home (Beef)

Ingredients
  • Parotta/Roti – 15 (Each Roti is about 15cm diameter)
  • Beef Curry – Curry from 500g of beef
  • Eggs – 7
  • Leeks – 75g
  • Carrot – 100g
  • Curry leaves – Few
  • Onion – 250g
  • Green chili – 25g
  • Salt – As you need
  • Cooking oil – As you need
Instructions

1. First, you should have to make a beef curry. Here is a way to make beef curry for Kothu Roti. (Refer Note 1)

2. Take the Parotta or Roti and cut it into small pieces as shown in the picture below.

3. Take the eggs and keep them aside.

4. Chop the onions, green chilies, and curry leaves as shown in the picture below. (Refer Note 2)

5. Take the carrot, peel off the skin, wash it, and cut it into small pieces. Likewise, take the leeks, cut it into small pieces and wash them well at least 2 or 3 times.

6. Heat the oil in an egg fry pan and add the eggs. Add some salt as well.

7. Put the flame on medium. Using a spatula, move the eggs around in the pan to make sure that they cooked thoroughly.

8. Continue cooking and scrambling the eggs until thickened and no visible liquid egg remains. Keep the well-scrambled eggs aside for final preparation.

9. Heat the oil in a large cooking pan and add 80% of onions (Keep the rest of 20% for final preparation). Sauté the onions on medium flame until it gets translucent.

10. Add 80% of green chilies (Keep the rest of 20% for final preparation) and curry leaves. Stir and cook for 2 minutes.

11. Add carrots, mix, stir, and cook for another 2 minutes.

12. Add the leeks and cook for 1 minute.

13. Now add the pieces of parotta.

14. Add the beef curry as well. (Refer Note 3)

15. Turn the flame to high, mix and stir everything well for at least 1 or 2 minutes constantly.

16. At last, add the scrambled egg, rest of the onion, and green chilies. Put the flame on low, cook, and mix everything for 1 or 2 minutes.

17. Taste the kothu roti and add salt if needed.

18. Serve and enjoy this delicious Sri Lankan style beef kothu roti. This is how to make kothu roti at home easily.

Notes

Note 1: If it is hard to make beef curry, you can buy a beef curry from restaurants. But for a good taste, I recommend you to make beef curry by your own.

Note 2: If you don’t like more spiciness, you can reduce the number of green chilies.

Note 3: Add all the beef, but don’t add all the gravy. At first, add half of the gravy and mix with parotta. If you feel the gravy is not enough, then add more gravy as you wish.
