1. Take the carrot, green bean, and leeks. Clean and wash them well. (Refer Note 1)

5. First of all, heat the oil and add mustard seeds. Let it splutter. Now add curry leaves, and dried red chilies. Fry them for 30 seconds.

7. Add chopped leeks. Stir and cook on medium flame for about 30 seconds.

9. Mix everything well and cook uncovered under high flame until the milk foams up. For me, the milk has foamed up in a minute.
10. Now turn the flame to low and add the toasted semolina. As soon as you add the semolina, stir and mix as quickly as you can. Constantly stir and mix everything under low flame for about 2 minutes.

Notes
1. I used only three vegetables. But you can add some more vegetables on top of these three vegetables. For instance, you can add mushrooms, peppers, peas, fried eggplant, etc.
2. You should use the toasted semolina. If you don’t have the toasted one, make that instantly. Just heat the pan and add semolina. Stir and cook on medium flame for about 5 minutes. You should stir constantly to avoid burning and toasted evenly.
3. I made the coconut milk from grated coconut. If it is hard to find grated coconut, you can use coconut milk powder or bottled coconut milk.
4. If you want to turn this dish much tastier, add some ghee at the final stage.
