A few weeks ago I have posted the best way to make chicken fried rice without soy sauce which went viral. Thus, this time I wanted to make vegetable fried rice without soy sauce and eggs.
This is one of the delicious and easiest ways to make vegetarian fried rice.
If your kid doesn’t like to eat vegetables, this vegetable fried rice is the perfect choice for him. I am pretty sure that he will finish the plate quickly.
Basically, people make this main dish for lunch, but you can have this for dinner as well.
Alright, let’s jump into the recipe. Here is the best way to make vegetable fried rice without eggs, soy sauce, and vinegar.

How to Make Vegetable Fried Rice
Ingredients
- Basmati rice – 350g
- Soy meat – 25g (Optional)
- Carrot – 100g
- Leeks – 75g
- Green bean – 75g
- Onion – 125g
- Garlic paste – 1 teaspoon
- Ginger paste – ¼ teaspoon
- Turmeric powder – ¼ teaspoon
- Curry leaves – 2 sprigs
- Salt – As you wish
- Cooking oil – As you wish
Instructions
1. Wash the rice and boil it. Add little oil and salt when boiling the rice. The boiled rice should soft but not sticky or soggy.
2. Add soy meat and water in a bowl. Let the soy meat to soak for 30 minutes. Then strain all the water and cut them into half as shown in the picture below. Add salt, mix them well, and keep it aside.
3. Cut the carrot, onion, green bean, and leek as shown in the picture below. Also, take some curry leaves.
4. Get ready with garlic paste, ginger paste, turmeric powder, and salt.
5. Heat the oil in deep fry wok and add curry leaves. Stir and fry them for 20 to 30 seconds. Once done, put them on top of the boiled rice.
6. Fry the onion under the high flame until it turns into brown color. For me, it takes about 5 minutes. Put them on top of the rice.
7. Fry the soy meat under the high flame until it turns into light brown. For me, it takes about 3 minutes. Once done, put them on top of the rice.
8. Now, heat the oil in a cooking pan and add green bean. Cook uncovered under medium flame for 2 or 3 minutes. Stir occasionally to avoid burn. Then, add the carrot and cook uncovered under medium flame for 3 or 4 minutes. Stir occasionally.
9. Add leeks, salt, and turmeric powder. Stir, mix and cook uncovered under medium flame for 2 or 3 minutes.
10. Finally, add ginger and garlic pastes. Cook uncovered under medium flame for 1 minute. Stir constantly to avoid burn.
11. Now put the vegetable mixture too on top of the boiled rice. So now you have the boiled rice, fried curry leaves, onions, soy meat, and vegetable mixture.
12. Mix them well till totally combined.
13. Taste the rice and adjust salt if needed.

Notes
1. Instantly made ginger and garlic paste give a nice aroma and taste. If it is hard to make instantly, you can use the bottled one.
2. Add some salt with the onions and mix them up before taking it to fry.
