If not, here is the good chance to give a try on this delicious healthy vegetarian dish. Basically, when you cooked or boiled okra it becomes slimy and most of the people don’t like that. Once you add tomatoes, the sliminess of okra totally disappears. This is one of the main reasons why people add tomatoes while cook okra.

We Sri Lankan often make this okra tomato coconut curry for lunch. You can eat this dish with rice and other curries. Since this curry is not spicy, kids would like to eat it. Alright, let’s see how to make Sri Lankan style okra tomato coconut curry.

Okra Tomato Coconut Curry
Ingredients
- Okra/Ladies finger – 125g
- Tomato – 125g
- Large onion – ½
- Green chilies – 2 or 3
- Thin coconut milk – 250ml
- Salt – As you need
- Turmeric powder – ¼ teaspoon
- Curry leaves – Few
Instructions
1. Take the okra, tomato and rinse it well. Cut the okra into about 2-inch pieces and slice the tomato as shown in the picture below.
2. Chop the onions and slice the green chilies. Get ready with curry leaves, turmeric powder, and salt. Also, extract thin coconut milk from grated coconut. (Refer Note 1)
3. Place the cooking pan on the stove. Add okra pieces, sliced tomatoes, chopped onions, curry leaves, sliced green chilies, turmeric powder, and salt.
4. Add the coconut milk and mix everything well. Now switch on the flame.
5. Cook covered under the high flame for 6 to 8 minutes.
6. Open the lid, stirs, mix everything, and again cook covered under medium flame for 5 to 7 minutes.
7. Open the lid, taste the curry, and adjust salt if needed.
8. Serve and enjoy this healthy okra tomato coconut curry recipe in Sri Lankan style.
Notes
Note 1: In Sri Lanka, we can easily get the grated coconut. If it is hard to find in your area, you can use coconut milk powder or bottled coconut milk.
