Few people completely avoid soy sauce as it contains some chemical products. This is the main reason why I avoid soy sauce to this delicious healthy vegan fried noodles. Is this simple vegetable fried noodles recipe good for your health? Of course, it is. We add different vegetables cabbage, carrot, leeks, and banana pepper so it is really good for your health. Besides, we add soy meat, onions, curry leaves, ginger, and garlic. So, all in all, this vegetable fried noodle is a pack of healthy things. The only thing you should consider is the cooking oil. Since we fried everything, this vegetable noodles recipe contains some extra oil.
This simple vegetable fried noodles recipe is good for lunch and dinner. You can have this with any thick gravy meat curries like chicken curry, beef curry, or mutton curry. Besides, any deep fried meat would be a good combo with this vegan noodles. This healthy vegetable noodle is very tasty and easy to make at home. Alright, let’s see how to make a perfect Sri Lankan style vegetable fried noodles without a single drop of soy sauce.

Simple Vegetable Fried Noodles Recipe
Ingredients
- Noodles – 400g
- Cabbage – 100g
- Carrot – 125g
- Banana pepper – 50g
- Leeks – 100g
- Onion – 150g
- Soy meat – 30g (Optional)
- Curry leaves – 2 sprigs
- Ginger paste – ½ teaspoon
- Garlic paste – 1 teaspoon
- Turmeric powder – ¼ teaspoon
- Salt – As you want
- Cooking oil – As you need
Instructions
1. Add soya meat and water in a bowl and let the soy meat to soak for 30 minutes.
2. After 30 minutes wash the soy meat 2 or 3 times and cut them in the half. Add some salt, mix and keep it aside.
3. Take carrot, leeks, cabbage, and banana pepper, clean and wash them.
4. Chop the vegetables into small pieces as shown in the picture below.
5. Slice the onions and get ready with curry leaves.
6. Get ready with ginger paste, garlic paste, turmeric powder, and salt. (Refer Note 1)
7. Boil the noodles and spread it on a flat tray or on a large bowl. (Refer Note 2 & Note 3)
8. Heat the oil in deep fry cooking pot and add curry leaves. Fry them under the high flame for 20 to 30 seconds. Once it has done, add them on top of the noodles.
9. Now fry the onions. Fry them under high flame until it turns into brown color. You should stir occasionally. For me, it takes about 5 minutes. Once it has done, add them on top of the noodles. (Refer Note 4)
10. Then fry the salted soy meat. Fry them under high flame until it turns into little brown color. For me, it takes about 3 minutes. Once it fried, add them on top of the noodles.
11. Now heat the oil in a cooking pan and add cabbage. Stir and cook covered under medium flame for 1 or 2 minutes.
12. Add the carrot and mix them well. Cook covered under medium flame for 1 or 2 minutes.
13. Now add long banana, leeks, turmeric powder, and salt. Mix and cook uncovered under medium flame for 2 or 3 minutes. You should stir occasionally to avoid burn.
14. At last, add the ginger and garlic pastes. Stir, mix and cook uncovered under low flame for 1 minute. You should stir constantly.
15. Add the vegetable mixture on top of the noodles. Now you have boiled noodles, all fried things, and vegetable mixture.
16. Mix everything well until totally combined. I used two forks to mix them up. Though you can do by your own way.
17. Taste the noodles and adjust salt if needed.

Notes
Note 1: I instantly made ginger and garlic pastes. You can use the bottled one as well. But instantly made ginger paste and garlic paste are always give a good smell and taste to the food.
Note 2: When you boil the noodles add some salt and cooking oil in the boiling water to avoid stick with each other.
Note 3: You should cook the noodles in a right way. It should soft and chewy but not soggy and mushy.
Note 4: Add some salt to the onion and mix it up before starts fry them.
