Drumstick Leaves Stir Fry | Moringa Leaf Coconut Recipe

A few months back, I posted drumstick spicy and drumstick non-spicy curries which were gone viral. After that, some of my followers asked me to post the drumstick leaves stir fry recipe. So, here you go guys, this time I am going to show you how to make drumstick leaves stir fry. Drumstick leaves stir fry or Moringa leaf with grated coconut is one of the healthiest green vegetable dishes in Sri Lanka. This recipe is exactly like an Alternanthera Sessilis fry dish recipe, but the taste is little different. Basically, we cook this healthy vegan dish for lunch. Alright, let’s see how to make a tasty yet healthy drumstick leaves stir fry with grated coconut in Sri Lankan style.

Drumstick Leaves Stir Fry Recipe

Ingredients
  • Drumstick leaves – 100g
  • Grated coconut – 3 tablespoons
  • Onion – 50g
  • Green chili – 1 or 2
  • Dried red chili – 1 or 2
  • Mustard seeds – ¼ teaspoon
  • Turmeric powder – 2 Pinches
  • Cooking oil – 1 tablespoon
  • Salt – As you wish
Instructions

1. Take the bunch of fresh drumstick leaves and separate the leaves from the stalk. Chop the leaves and wash it in the water.

2. Chop the onions, green chilies, and dried red chilies. Also, get ready with mustard seeds, salt, turmeric powder, and grated coconut.

3. Add salt and turmeric powder to the chopped drumstick leaves. Mix it well and leave it aside.

4. Heat the oil in a cooking pan and add mustard seeds. Let it splutter. Then add onions, green chilies, and dried red chilies. Sauté it until the onion turns into golden color. For me, it takes about 2 minutes.

5. Now add the drumstick leaves, mix well, and cook covered under low flame for 2 to 4 minutes.

6. Take off the lid, stir, mix, and cook uncovered under low flame for another 2 to 4 minutes. During this time you should stir constantly to avoid burn.

7. Now add the grated coconut. Stir constantly and cook uncovered under low flame for 1 or 2 minutes.

8. Taste the curry and adjust salt if needed.

Notes

1. If you don’t like a little spiciness, you can avoid or reduce the number of green chilies and dried red chilies.

2. If it is hard to find grated coconut, it is better not to try this recipe, because grated coconut is the main ingredient to this dish.
