Best Chicken Fried Rice Recipe
Ingredients
- Basmati rice – 400g
- Boneless chicken – 400g
- Carrot – 100g
- Green bean – 75g
- Leeks – 75g
- Onion – 100g
- Curry leaves – 1 or 2 sprigs
- Garlic paste – 1 teaspoon
- Ginger paste – ¼ teaspoon
- Turmeric powder – ¾ teaspoon
- Cinnamon – 4 to 6
- Crushed cardamom – ½ teaspoon
- Salt – As you need
- Cooking oil – As you need
Instructions
1. Take the basmati rice and wash it. Add little oil and salt when you cook the rice. The cooked rice should be soft but not mushy or sticky.
2. Once the rice cooked, put it on a flat surface container and spread it well as shown in the picture below. (Refer Note 1)
3. Take the boneless chicken, cut it into large pieces, and rinse them well. Also, get ready with cinnamon, cardamom, ½ teaspoon of turmeric powder, and salt.
4. Place the cooking pot on the stove and place the chicken pieces, cardamom, cinnamon, turmeric powder, and slat. Mix them until totally combined and switch on the flame.
5. Cook covered under high flame until the chicken cooked enough. In a halfway through, open the lid and give a good stir. For me, it takes about 12 minutes. (Refer Note 2)
6. When the heat goes down, tear the chicken into small pieces as shown in the picture below.
7. Take carrot, green bean, and leeks. Clean and wash them well. Also, slice the carrot, chop the green bean, and chop the leeks. I recommend you to use this vegetable chopper.
8. Slice the onions and take one or two sprigs of curry leaves. Also, get ready with, garlic paste, ginger paste, ¼ teaspoon of turmeric powder, and salt. (Refer Note 3)
9. Heat the oil and fry the curry leaves under the high flame for 30 seconds. Put it on top of the rice.
10. Fry the onions under high flame until it turns to golden color. For me, it takes about 5 minutes. Once it has done, put it on top of the rice.
11. Fry the chicken pieces under medium flame until it starts to turn to golden color. For me, it takes around 5 minutes. Once done, put it on top of the rice. (Refer Note 4)
12. Now, heat some cooking oil in a pot and add green bean. Cook covered under low flame for 2 or 3 minutes.
13. Add the carrot and mix them.
14. Cook covered under low flame for another 2 or 3 minutes.
15. Now, add the leeks, mix, and cook uncovered under medium flame for 2 or 3 minutes. You should stir occasionally to avoid burn.
16. Finally, add garlic paste, ginger paste, ¼ teaspoon of turmeric powder, and salt. Stir, mix and cook uncovered under low flame for 1 minute. Stir constantly to avoid burn.
17. Once you have done with the vegetable mixture, put that on top of the rice. So, now you have the boiled rice, fried curry leaves, fried onions, fried shredded chicken pieces, and the vegetable mixture as shown in the picture below.
18. Mix until everything combined well.

Notes
1. The reason why put it on a flat surface container is, the heat goes out quickly, hence the rice won’t boil anymore.
2. Don’t add water when you boil the chicken because the chicken itself has water. But, if you feel the chicken pieces get burning, you should add some water.
3. I instantly made garlic and ginger pastes for a perfect smell. If it is hard for you, use the bottled one.
4. Don’t fry the chicken pieces until it turns to the crispy stage. It should be half crispy and half soft.
