You may have tasted ash plantain curries in different styles, but the one I am going to show you today is a completely different style of ash plantain dish. Today I am going to demonstrate you a unique way to make ash plantain fry dish in Jaffna style.

Ash plantain fry sambal is one of the easiest yet tastiest dishes. This is one of the favorite dishes for kids.

Basically, people make ash plantain fry sambal for lunch, but you can have this for dinner as well.

Alright, without further talks, let’s see how to make Jaffna style ash plantain fry curry dish in a unique way.

Ash Plantain Fry Sambal Recipe

Ingredients
  • Ash plantains – 2 large
  • Dry roasted red chilies – 6 to 8
  • Vinegar – 2 tablespoons
  • Mustard seeds – 1 teaspoon
  • Sugar – ½ tablespoon
  • Salt – As you need
  • Turmeric powder – ½ teaspoon
  • Onion – 50g
  • Green chilies – 1 or 2
  • Very thick coconut milk – 4 tablespoons
  • Cooking oil – As you need
Instructions

1. Get ready with dry roasted red chilies, vinegar, mustard seeds, sugar, and salt.

2. Grind dry roasted red chilies, vinegar, mustard seeds, sugar, and salt to a smooth paste as shown in the picture below.

3. Chop the green chilies and onions into fine pieces.

4. Extract very thick coconut milk.

5. Take 2 large ash plantains, peel off the skin, and cut them into small pieces as shown in the picture below. Rinse it well, then add turmeric powder and salt and mix everything well.

6. Heat the oil in a deep fry pan and fry the chopped plantains until they turn to light brown color.

7. Now you are having fried ash plantain, ground smooth paste, onion, green chili, and thick coconut milk.

8. Put everything together in a bowl.

9. Mix them well until all combined. Taste and adjust salt if needed.

Notes

1. I used small onions for a perfect taste. If small onions or shallots are not available, you can use the large one.

2. If it is hard to make coconut milk instantly, you can use bottled coconut milk or coconut milk powder.
