Simple Carrot Curry Recipe for Rice
Ingredients
- Carrot – 250g
- Onion – 50g
- Green chilies – 2 or 3
- Curry leaves – Few
- Thick coconut milk – 150ml
- Salt – As you need
- Turmeric powder – ¼ teaspoon
- Cooking oil – As you need
Notes
1. I instantly made coconut milk. If it is hard to find grated coconut use coconut milk powder or bottled coconut milk.
2. You can reduce the number of green chilies if you don’t like that.
Instructions
1. Take the carrots, peel off the skin, rinse well, and cut them to small pieces as shown in the picture below.
2. Chop the onions and slice the green chilies. Besides, take some curry leaves.
3. Get ready with turmeric powder and salt. Also, prepare the coconut milk.
4. Place a skillet on the stove. Add the carrot and cooking oil. Give a good mix and cook covered under medium flame for 5 minutes.
5. Now add onion, curry leaves, and green chili. Mix and cook uncovered under medium flame until carrots turn tender. Stir occasionally to avoid burning. For me, it takes about 2 minutes.
6. Now add turmeric powder, salt, and coconut milk. Give a good mix.
7. Cook covered under medium flame for 1 to 2 minutes.
8. Taste the curry and adjust salt if needed.
