Elephant foot yam fry curry is one of the well-known vegan dishes in Sri Lanka. It is very rich in fiber which is good for your bowel movement and constipation.

Elephant Foot Yam Curry Recipe

Ingredients
  • Elephant foot yam – 500g
  • Onion – 75g
  • Thick coconut milk – 300ml
  • Thin tamarind juice – 100ml
  • Curry powder – 1 tablespoon
  • Garlic cloves – 4 or 5
  • Curry leaves – Few
  • Fennel seeds – ¼ teaspoon
  • Mustard seeds – ¼ teaspoon
  • Turmeric powder – ½ teaspoon
  • Salt – As you need
  • Cooking oil – As you need
Instructions

1. Take an elephant yam and peel off the dark brown skin. Rinse it well. Then, cut it into tiny pieces as shown in the picture below.

2. Add turmeric powder and salt. Mix them well.

3. Heat the oil in a deep fry pan and fry them till turns to golden color as shown in the picture below.

4. Now get ready with chopped onion, sliced garlic, curry leaves, fennel seeds, mustard seeds, and salt.

5. Prepare thick coconut milk and thin tamarind juice.

6. Heat the oil and add mustard seeds. Let them splutter. Then, add the onions, garlic, curry leaves, and fennel seeds. Fry them until the onions turn to golden color. Stir occasionally to avoid burning.

7. Add coconut milk, tamarind juice, curry powder, and salt. Mix them well.

8. Cook covered under high flame for 5 to 7 minutes.
